“Banana flour is a powder traditionally made of green bananas that is often used as a gluten free replacement to wheat flours or as a source of resistant starch, which has been promoted by certain dieting trends such as paleo and primal diets.
Banana flour is generally produced with green bananas that are peeled, chopped, dried, and then ground. This process can be completed traditionally by hand where the bananas are sun dried, dried in an oven, or a residential food dryer and then either ground in a mortar and pestle or with a mechanical grinder.
Chile has been developing an alternative method of banana flour production using ripe banana waste. Chilean researchers have developed a process that uses over ripe banana peels to add dietary fiber to the ripe banana fruit, which does not have the resistant starch properties of green bananas” Source: wikipedia
I created this recipe while in Brazil using local ingredients 🇧🇷. However, you can adjust it to make it local to wherever you live and if you can’t get your hands on green banana flour 🍌!
Makes 6-8 buns.
tsp= teaspoon , tbsp = tablespoon
- 1.5 tbsp dry yeast
- 1/4 cup honey/sugar
- 1 cup of water
- 1 tbsp salt
- 1 tsp baking soda
- 1 tbsp coconut oil (or any other oil)
- 1 egg
- 2.5 cups of whole wheat flour
- 1.5 cups green banana flour (or any other non-wheat flour you like e.g. Oat, Quinoa, Spelt the last two are high in protein)
Warm water up with honey unil it is lukewarm (careful that it’s not hot, just warm!)
Mix and let set until the yeast bubbles (5min)
Meanwhile, place the salt, baking soda and both flours into a good sized bowl
When the yeast is bubbling add the oil and pour onto the flour
Need flour for 10- 15 min until it forms one big lump that’s not too sticky. When you are done, make little balls and place them on a pre-oiled baking tray with large rims
Cover the tray with a tea towel making sure that it doesn’t sag down
Let sit until the balls double (1-1.5 hours depending on how warm your home is, the warmer it is, the faster the bread will rise)
Place the tray in a pre-heated oven (375 F)
Bake for 30-40 min . Store in fridge
Cut in half, place on an oiled pan and sizzle on both sides until golden. Garnish with avocado, sea salt and basil or your favourite spread
